East Coast Egg & Potato Salad
We started with a classic egg salad – then added an east coast twist by tossing in chunks of steamed, tender farmer’s market potatoes along with our own housemade mayonnaise.
Our egg salad begins with pastured eggs, of course, mixed with that handmade mayo – the one made with no soybean or canola oil (our mayonnaise is made using only extra virgin olive oil and a little coconut oil). The potatoes are fresh from the farmer’s market, and add a robust element to an already tasty luncheon dish.
You can serve this on a bed of greens, or eat it straight from the container with a spoon!
